Fall is the favorite season in our house. Not just because it (eventually) brings a reprieve from the South Texas heat. It also puts the kids back in school, let’s them return to outside play, and brings the excitement of a new football season.
This year has started off well with a loss for the New England Patriots Thursday night. (Sorry if you are a fan, you have my team’s Super Bowl 49 ring as a consolation – where’s Beast Mode?) For me, Football means friends, fun, and food. Although this year I’ll need to look a little further than the five topping deep dish pizza that I used to enjoy. This year I’m going to go big.
I don’t care who you are, a Cheesy Bacon Spinach Dip, sounds like perfect football food. (Okay, that might not work for vegetarians, but I don’t even think you could sell them on a Cheesy Tofu Spinach Dip.) I found a great recipe from the Delish website that I will amend below to drop the baguette. For the original recipe, click here. My version is included below.
Cheesy Bacon Spinach Dip
Ingredients
1 8-oz. block Cream Cheese, softened
1/3 cup Mayo
1/3 cup Sour Cream
1 tsp Garlic Powder
1 tsp Paprika
1 16-oz. package Frozen Spinach, thawed and squeezed of water
10 slices of Bacon, cooked and crumbled
1 cup Grated Parmesan
1 cup Shredded Mozzarella
Directions
- Preheat oven to 350 degrees. Stir Stir together cream cheese, mayo, sour cream, garlic powder, and paprika until combined.
- Fold in spinach, cooked bacon, Parmesan, and 3/4 cup mozzarella. Transfer spinach mixture to baking dish and sprinkle with remaining 1/4 cup mozzarella. (If mixture is very high in baking dish, place a baking sheet below dish to catch spillage.)
- Bake until golden and bubbly, 25 to 30 minutes.
- Eat by the scoop with pork rinds, almond crackers or my favorite, a serving spoon!
